Fried Asparagus, Yum-o!!

I first saw about fried asparagus from a friend on Facebook. Then I saw it on How Sweet It Is and started thinking, man I am missing out on something. Then the final straw was seeing it posted on Pinterest by a my friend Jenn. Well, I knew someone was telling me something at that point. I was actually really excited because I found some very thin asparagus at Aldi’s. When I say thin I am talking like green been thin.
So I have to admit that I did not at all look at the recipes. So I will tell you how I did it. I will change one thing next time, I will use an egg soak instead of the milk soak I did. First I started by washing and drying the asparagus. The next steps are the normal battering (well for my family) steps. Dip in flour, then milk, then bread crumbs. For my bread crumbs I used the Italian flavors Ian’s Panko Bread Crumbs. I did add some freshly grated Parmesan.
  
The next thing I did was to fry them. I don’t have a fancy fryer so I just used my 10 inch skillet. I used canola oil and let it heat up. I fried about 5 spears at a time for roughly 1 minute. When I took out them out, I placed them on a cookie cooling rack. While they were cooling, I did take some more Parmesan and grated it over while it was cooling. And well I do love fresh Parmesan so I did grate more when I plated.
These will be for sure something I will make again. Actually I am heading back to Aldi’s today and I hope that I will find some more of those asparagus.
Fried Asparagus
1 bunch of asparagus
1 egg
2 c flour
2 c Ian’s Panko Bread Crumbs
1/4 c grated Parmesan
canola oil
place oil in skillet and heat. Wash and dry asparagus. place flour, egg (whisked), and bread crumbs with cheese in their own bowls. Then take asparagus and dip in flour, then egg, then bread crumbs. Place oil and cook for 1 minute. While cooling on a rake grate some more Parmesan cheese. Plate and enjoy!!
